APPLE CIDER DONUTS
Ingredients:
- 1 cup apple cider
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 1 egg
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp ground nutmeg
Instructions:
- Preheat oven to 375°F (190°C). Grease donut pan with non-stick cooking spray.
- In a small pot, bring apple cider to a boil over medium-high heat. Cook until reduced to 1/2 cup, about 10-15 minutes. Set aside.
- In a medium bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
- In a small bowl, whisk together melted butter, egg, and reduced apple cider.
- Add wet ingredients to dry ingredients and stir until just combined.
- Spoon batter into donut pan, filling each mold about 3/4 full.
- Bake for 10-12 minutes or until lightly golden brown.
- Let cool in pan for 5 minutes before transferring to wire rack to cool completely.
- Dunk cooled donuts in a bowl of cinnamon sugar or glaze with icing if desired.
- Enjoy your apple cider donuts with a cup of hot cider and a cozy blanket...or while wearing a flannel shirt on your front porch swing. Embrace that fall feeling!
